WAFFLES with spinach and cheese

SPINACH IS GREAT IN PIES, SALADS AND HOT DISHES. 

This year I just rediscovered it for myself,  starting experimenting it in baking. The first success was a very tender spinach strawberry cake with coconut whipping cream, and now it’s these delicious waffles made with our buckwheat gluten-free and refined sugar free mix, spinach, which you don’t really taste there, promise, a milk and butter of your choice, vegetable oil and eggs which you can substitute for flax eggs for vegan version.
 
Green spinach waffles, tasty and healthy, great for breakfasts.

So for 3-4 servings you will need:
• 350 G buckwheat wafer mix 
• 200 g BUTTER of your choice              • 100 g FRESH SPINACH
• 3 EGGS
• 200 ML MILK of your choice 
Cooking:
• 2 tsp baking powder
• SALT TO TASTE
• 150 G CREAM CHEESE or Vegan cream cheese 
• 2 ST. L. OLIVE OIL
• 1/2 tsp DRIED BASIL
1. Grind spinach in a blender. Combine soft butter with spinach puree.
2. Add eggs, mix well, salt and pour in milk.
3. Sift buckwheat  flour mix with baking powder on top. stir until a homogeneous dough is obtained.
4. Bake waffles until browned.
5. Mix cream cheese with dried basil and olive oil and serve with hot waffles.

ON A NOTE SIDE:
You can use it fresh spinach
crushed in a blender, as well as frozen, but in the latter case it is very important to remove all excess liquid.
