Coconut Beetroot Energy Balls Recipe

Since I haven’t been on the blog for a while, I have so much to share with you. 

As I said on my previous blog post I partnered with the THERMOMIX and enjoying it so far. I dis over so many great recipes along that and here is one I would like to share with you. It is coconut beetroot energy balls which were are popular amongst the kids as well. I had to adjust this recipe a little since it was made for THERMOMIX machine, but you can of course do it in the blender that you have at home. 

Ingredients: 

210 g raw beetroots, peeled and cut into pieces (approx. 2 cm)
12 pitted Medjool dates
130 g desiccated coconut, plus extra for coating
80 g raw cashews (see Tips)
2 tbsp cacao powder
½ tsp vanilla bean paste

 

Preparation: 

1. Place all ingredients in to a blender and mix on high speed until well combined. 

2. Place extra desiccated coconut on a plate and set it aside.

3. With your wet hands roll tablespoons of mixture into in to balls ( makes around 22 in total) 

4. Roll balls in desiccated coconut and place them in fridge for 30 min before serving. 

and that’s it . Pretty easy , isn’t it? This is one of the very easiest recipes from THERMOMIX cooking book, but there is so much more to it.
